Hubei is a central Chinese province whose distinctive contribution to the country's tea map is En Shi Yu Lu — the only widely known Chinese green tea fixed by steaming rather than pan-firing. The technique, revived in 1936 in Enshi City, is the same fixation principle as Japanese sencha but applied to a Chinese cultivar and finishing process.
