En Shi Yu Lu (literally "Jade Dew of Enshi") is the only widely known Chinese green tea fixed by steaming rather than pan-firing — a method first documented in the Tang dynasty and revived for this tea in 1936 in Enshi City, Hubei. Steam halts oxidation, then the leaves are rolled and shaped by hand and finished with a slow low-temperature fire down to roughly 3% moisture. The chlorophyll- rich jade colour gave the tea its name.

Brews paler and more vegetal than pan-fired greens; closer in character to Japanese sencha because of the steam fixation, but with a Chinese cultivar and finishing.
