Boseong Sejak is Korea's commodity-grade premium green tea, plucked at the second of the four "sparrow" grades (Ujeon → Sejak → Jungjak → Daejak) in early spring after Gogu (Grain Rain). Most Boseong production uses the Yabukita cultivar introduced during the 1939 Japanese colonial plantation establishment; the misty mountain conditions (a national landmark of terraced farms) favour both first-flush sejak and later-flush jungjak/daejak. Korean deokkeum-cha processing — pan-firing in a cast-iron cauldron — gives Boseong sejak a slightly more roast-tinged profile than Japanese sencha from the same Yabukita.

Boseong sejak is denser-bodied than Hadong ujeon (Yabukita cultivar vs. heirloom Hadong) and tolerates a touch hotter water. The classic Korean small-pot multiple-steep approach.
