Oriental Beauty (Bai Hao Oolong)

Oriental Beauty (Dong Fang Mei Ren / Bai Hao Wulong / Pengfeng Cha) is a heavily-oxidised non-roasted oolong from Hsinchu County in Taiwan (notably Beipu and Emei townships). Its defining feature: the young summer leaves are deliberately left unsprayed so the tea jassid (Jacobiasca formosana) can bite them. The insect's saliva triggers terpene release and the heavy ~70% oxidation that follow give the tea its signature honey-and-muscat aroma — no insecticide is used, the bug bite is the production input.

Per Wikipedia, brew at 80–85 °C for 1–2 minutes Western-style. The 70% oxidation is unusually high for an oolong — closer to a black tea, but the flavour stays nectar-honey rather than malt.
