Fuding, in northeastern Fujian on the Taimu Mountain coast, is the canonical origin for Chinese white tea — Bai Hao Yin Zhen, Bai Mu Dan, and aged Shou Mei / Gong Mei cakes. The high humidity and seaside fog suit white-tea processing (withering + drying, no kill-green) and the region's Da Bai and Da Hao cultivars are the genetic backbone of the style.
