Bai Hao Yin Zhen — Silver Needle — is the most prestigious white tea, made entirely from downy-tipped buds picked over a few early-spring days in Fuding and Zhenghe (Fujian). Sun-withered without firing, then gently dried, retaining a clean melon-and-honey sweetness.
