Zhenghe Bai Mu Dan (Zhenghe White Peony)
Zhèng Hé Bái Mǔ Dān · 政和白牡丹
Zhenghe Bai Mu Dan ("White Peony") is the Zhenghe-style version of Bai Mu Dan, made from the Zhenghe Da Bai cultivar in northern Fujian (Nanping Prefecture, between Fuding and Wuyi). The cultivar's larger leaves and higher polyphenol content give the cup a thicker mouthfeel and bolder flavour than the better-known Fuding equivalent. Traditional Zhenghe processing favours indoor withering, shaded drying, and low-temperature baking — slower and more controlled than Fuding's outdoor sun-withering — which integrates a mellow honey-fruit depth into the cup.

Tolerates slightly hotter water than Fuding-style whites because of the higher polyphenol content of the Zhenghe Da Bai cultivar. Brews thicker and more fruity-honey than the lighter Fuding equivalents.
