Anji Bai Cha — "white tea from Anji" — is a green tea (despite the name) made from a leucistic Camellia sinensis cultivar whose leaves emerge pale yellow-white in early spring before chlorophyll builds. Picked at the bud-and-one-leaf stage and pan-fired, it gives a delicate, sweet, asparagus-and-bean-broth liquor.
